<p>Le miel est une matrice complexe majoritairement constitu\u00e9e de sucres, mais contenant \u00e9galement une fraction mineure de m\u00e9tabolites secondaires issus du nectar des plantes. Parmi ces compos\u00e9s figurent les acides ph\u00e9noliques, les flavono\u00efdes, les d\u00e9riv\u00e9s cinnamiques et d&rsquo;autres m\u00e9tabolites bioactifs responsables de nombreuses propri\u00e9t\u00e9s biologiques et pouvant servir de marqueurs de l&rsquo;origine botanique.<\/p>\n            <p>Dans le cadre du <strong>projet Prop&rsquo;OMiel<\/strong>, la caract\u00e9risation des miels issus des for\u00eats tropicales de La R\u00e9union et des mangroves des Seychelles et des Comores constitue un enjeu majeur pour l&rsquo;authentification des produits apicoles et la valorisation de la biodiversit\u00e9 r\u00e9gionale.<\/p>\n            <p>Cependant, l&rsquo;analyse m\u00e9tabolomique du miel est fortement limit\u00e9e par la pr\u00e9sence massive de sucres qui masquent les compos\u00e9s d&rsquo;int\u00e9r\u00eat. Une \u00e9tape d&rsquo;enrichissement s\u00e9lectif des polyph\u00e9nols est donc n\u00e9cessaire avant l&rsquo;analyse LC-HRMS.<\/p>\n\n            <div class=\"job-project-context\">\n
